Harvesting : Hand harvesting and hand sorting

Soil maintenance : ploughing only, weeding without chemicals

Vineyard age : 41 years

Winery :

Pre-maceration for 7 to 15 days. Alcoholic fermentation for 10 days, temperature control. Post-fermentation maceration takes 2 to 5 weeks.

Aging : 18 months in French oak barrels

Tasting :

The wine is fresh and fruity.

Nose: Elegant, with red fruits.

Taste: The mouth is full, fruity and complex with notes of toast and a delicious aftertaste.

Ageing potential : 4 to 8 years

Pairing : Serve fresh (at 17-19°C) ideally with meat, civets, game and cheese.
