Vinification:
Hand harvest from mid-October. Controlled fermentation in stainless steel vats for 30 days. Aging: 2 months in oak barrels and then 12 months in bottle.
Tasting notes:
Colour: Intense ruby.
Nose: Persistent and distinctive notes of wild berry jam and mulberry.
Taste: Full, smooth flavour with velvety tannins and a long aftertaste. A touch of liquorice.
Food pairing: stews, game, spicy cheeses, cured meats.
Ideal serving temperature: 18-20 °C. Decant at least half an hour before serving.
