De Chanceny is the symbol of our know-how in the production of excellent Loire sparkling wines, using the Méthode Traditionnelle developed in 1953.
Winemaker: Romain Sauvète. Agricultural engineer.
Grape variety: Chenin Blanc (100%), also known as Pineau de Loire.
Vine age: 35 years (average)
Planted: Our "Excellence" cuvée from Vouvray is made from grapes grown in a vineyard located on a limestone plateau overlooking the Loire River. The Chenin Blanc grapes are harvested with great care. The sublimation of the grapes is due to the chalk content of the terroir and the ageing of the wine for over two years in our tufa cellars. This brings out the quality of the grapes, i.e. a charming aromatic complexity and unusual elegance.
Techniques. Secondary fermentation is carried out in bottle, using the best wines according to the Méthode Traditionnelle.
Ageing: before the bottles are aged, they are stored horizontally for a minimum of 24 months on wooden slats in our tufa cellars. Uncorking produces an incomparably fine stream of bubbles.
Tasting notes. Pale golden colour with bronze highlights. Complex bouquet with aromas of toasted almonds, dried fruits and white fruits (peaches). Enriched with slight hints of lime blossom. On the palate it is fresh, with a lovely and soft aftertaste. A lovely, long and creamy aftertaste with a mineral undertone characterised by lime blossom and pears.
Pairing: best chilled (8-10°C), as an aperitif or with dessert (vegetable tart, fish and seafood, goat's cheese, chocolate desserts).
