Yield: 60 hl/ha
Vineyard area: 20 ha
Soil: Soil composed of clay, sand and silty sediment. There are also several layers of chalk from the foot of the Méron slopes to the Loudun Fault. The very hard limestone soil contains light blue flint. It has good drainage capacity and contributes to early maturation.
The grapes are crushed and destemmed. This is followed by cold settling for 24 hours. Vinification takes place over a period of two weeks at a low temperature (17 to 19 °C). Bottling and ageing in stainless steel tanks on thin lees for 3 to 4 months.
Ageing: bottling takes place in tuff stone cellars. Under ideal and natural conditions, and with protection against light and temperature changes, the wine continues to age in the bottle.
Tasting notes: Straw yellow colour with greenish highlights. Intense, captivating bouquet of vineyard-cultivated peaches, lemon zest and fresh grapefruit - a veritable fruit basket full of aromas. On the palate, the wine is initially direct with a subtle lemon flavour. The structure is taut and accompanied by a fresh grape flavour. The smooth and long aftertaste is reminiscent of peaches cultivated in the vineyard.
Pairing: This wine tastes very nice with fish in sauce, Asian cuisine, goat cheese or duck. It can also be enjoyed as an aperitif.
