Grape varieties : 40% Syrah, 30% Grenache, 30% Carignan
Terroir : Slate and sandstone in the primary area, three hills on steep slopes, at 250 m altitude, planted contourwise due to natural erosion. With an average age of 55 years, the Languedoc grape varieties have fully developed. With an area of 12 hectares, the grapes are exposed to all factors bringing more complexity and aroma.
Vinification: once the grapes are ripe, they are harvested by hand. The next step is to de-stem and store the grapes in vats. Cold maceration is followed by temperature-controlled fermentation. Afterwards, the grapes are racked and racked in accordance with the tasting process. Maceration according to the desired balance. After a period of ripening of the different grape varieties, blending follows, after the winter.
Tasting notes:
Appearance : Quite dark purple-red
Bouquet : Strong bouquet with spices, wild herbs 'garrigue', eucalyptus with Arbutus planica flower.
Palate : On the palate a full-bodied, gourmet wine with small black fruits such as blackberry combined with spicy notes.
The finish is long, the tannins are present with finesse and elegance.
Pairing : This wine is perfect with roasted meats, but also with mature cheeses.
