Origin:
- Variety: 100% Chardonnay
- Soil: brown calcareous and calcareous-clayey soil
Vinification:The grapes are hand-harvested and sorted directly in the vineyard. They are then immediately and carefully pressed without excessive compaction. After settling, which takes between 12 and 18 hours, the must is poured into vats and barrels for subsequent alcoholic fermentation without yeast cells. The alcoholic fermentation temperature is maintained at 18 to 20 °C.
During élevage, all our wines undergo malolactic fermentation. In this way, the delicacy of the aromas is preserved. Our wines are partially aged in oak barrels. The treatment of the wine-making process in this area combines the Burgundian tradition with the science of modern oenology. The vinification method remains traditional.
The wine has a delicate golden hue with shades of green. The bouquet combines fruity notes with hints of white flowers. The first contact is direct, with acidity that is balanced thanks to its richness and roundness. The finish is long and fruity.
Storage and stability: it can be stored for 3 to 7 years.
Gastronomy: Serve between 10 and 12°C. Great as an aperitif with savoury cheese pastries. Enriches most appetizers, shellfish, poultry and fresh goat cheese.
Winemaker's word: 'The last parcel that was acquired was purchased in 2003, at the time I settled here. The area is located on the plateau of the village of Rully. A selection of 30 year old vines planted in calcareous clay soil."
