Winemaking/Aging: Hand harvested in crates to avoid crushing; these are emptied directly onto a sorting table on which sorters remove foreign bodies and perhaps the least beautiful grapes, then passage onto a vibrating sorting table. The harvest is then transported to the tank thanks to a conveyor belt, the grapes then remain between 20 and 30 days in their containers.
Since the 2016 vintage, the winemaking process is sulphur-free with wonderful aromas of fresh fruit.
The start of fermentation is fast, so we keep the tanks cold (6-8°C) for 5 to 7 days. Precise density and temperature control is done twice a day to have ideal fermentation kinetics, daily pumping and a maximum of two or three punch downs throughout the vatting period.
After alcoholic fermentation we will continue to rack then to steady state before putting the wine in barrels within 12 months.
After this year of barrel aging, the wines are racked, we add some SO2 to stabilize them, then they are filtered or not as the case may be and bottled by us.
Tasting: the nose adds aromas of slightly peppery black fruits. Pepper that is found in the mouth, with a spicy touch. Tannins are fine but present on the youngsters, will refine with time.
This wine will go well with meats in sauces, game, or strong cheeses
