Vineyards:
-Variety: 100% Pinot Noir
-Planting density: 10,000 vines/Ha
-Work in the vineyard: method of pruning guyot, strict bud removal, ploughing.
-Yield: 35 to 40 hl/ha
Harvest: Manual. Two types of sorting: in the vineyard and in the cellar Vinification: 100% centrifugation. 4 to 5 days cold maceration before fermentation. Fermentation is carried out at 28-30 °C. Breaking of the matoline cap and pumping is carried out twice a day. In the Domaine Ninot winery, the crushing of the matoline hats is always done with the feet.
Curing time in vats: 10 to 15 days. After the racking period, the grapes are gently pressed, which brings the must and the pressed must together.
Ageing: 100% in barrels. To preserve the delicacy of the aromas, the use of new oak is limited (10% new oak, 30% 1 year old barrels, 30% 2 year old barrels, 30% 3 year old barrels). Complete malolactic fermentation.
Tasting notes. The bouquet is enticing and delicate with aromas of red fruits. In the mouth, the richness of the wine is dominated by notes of cherry. The finish is elegant and fresh with sweet and spicy notes. Ageing potential: 3 to 7 years.
Pairing : Roast meat, duck breast. Small feathered game, hunting rabbit or lamb.. Cheese board : soft cheeses, Reblochon, Cîteaux, Brillat-Savarin and Epoisses.
