Harvesting: hand harvesting and manual sorting
Vinification:
Vinification in stainless steel tanks for 20 days. Alcoholic fermentation for 7 days, under temperature control.
Aging: 12 months in French oak barrels
Tasting:
Intense ruby colour, subtle notes of cherry, cinnamon, dark tobacco with touches of bourbon vanilla. Balanced tannins.
Food pairings: roasted dark meat, beef and lamb, game dishes
Serving temperature: 18°C - 20°C
