"Sovagnà" is the name Mr Cravanzola gave to his Barolo wine to distinguish it from others. Translated from the local Piedmontese dialect, it means 'elegant, expressive, well-built', just like the Barolo wine from the Cravanzola winery.
Vinification:
Hand harvest. Fermentation takes 7 days at a controlled temperature of 32°C. Aging: 24 months in French oak. After bottling, it rests in the cellar for a minimum of 12 months.
Tasting notes:
Colour: elegant wine with a full, deep garnet colour.
Nose: complex, full bouquet, floral and fruity notes (especially red fruits) with spicy hints of cinnamon and vanilla.
Taste: full-bodied with a strong aromatic finish.
Food pairing: red meat, game, mature cheeses.
Ideal serving temperature: 16-18 °C
Ageing potential: 15-16 years
