Marano di Valpolicella is a hilly area at 300 m above sea level with limestone and clay soil.
Vine age: 15-30 years
Vinification:
Hand harvest from late September to mid-October. Manual sorting of the best berries. Mature grapes are dried on wooden mats for a minimum of 90 days (higher concentration). At the end of January, controlled fermentation with special yeasts in stainless steel vats takes place. To refine the flavour, it is left to mature in 25 or 38 hl wooden casks for 3 years.
Tasting notes:
Colour: deep ruby red, almost garnet in colour.
Nose: spicy and ethereal aromas, very complex, with spices and hints of dried fruit (mainly cherries).
Mouth: full-bodied with a velvety taste. Intense flavour, firm body, silky aftertaste.
Food pairings: game, roasts, strong cheeses, grilled cheeses.
Ideal serving temperature: 16-18 °C
