Here the soils are granite on the plains and clay on the slopes. The climate is characterized by the strong influence of the sea on the Pacific Ocean. This ensures slow ripening and high quality grapes. Seasonal temperatures were cooler, which contributed to the quality of the grapes, hence the resulting Pinot Noir wines are very aromatic and fresh with good acidity.
Ageing: 8 months in French oak barrels.
Colour: bright red with hints of ruby.
Nose: fresh strawberries and cherries, spices, subtle notes of mocha and vanilla.
Flavour: elegant, sensual and fruity, with fresh acidity and a smooth, velvety texture.
Serving temperature: 14-15°C
Pairing: seared tuna, salmon, ostrich carpaccio, beef, and duck breast.
